How Long Does Red Wine Last After Opening? The Margin You Actually Have
An opened bottle of red wine holds up for about three to seven days at room temperature and one to two weeks refrigerated, and the variable that moves that range most is how much wine is left in the bottle. Pour one glass from a 750 mL bottle, reseal it, and you have trapped roughly 31 mL of oxygen against the 600 mL that remain, about nine air saturations. Pour half and you trap 78.7 mL against 375 mL, roughly 35 saturations, which is past the level at which red wine begins to show oxidized character. The dose per unit of wine quadruples while the calendar reads the same. Judge an open bottle by fill level, storage temperature, and smell. Oxidized red wine is unpleasant rather than unsafe, and it stays useful in a pan well after it stops being good in a glass.
"Last" is a quality question, because the safety question is settled
The FDA Food Code treats a food below pH 4.2 as not requiring time and temperature control for safety, and wine sits between pH 3.0 and 4.0 with 12 to 15% ethanol on top. An open bottle grows spoilage flora, acetic acid bacteria and wild yeast, which make vinegar and solvent.
So the question is sensory, which is my ground; since 2011 I have turned what people smell into language they can act on. Oxidation converts ethanol to acetaldehyde, and the Australian Wine Research Institute and the Waterhouse lab at UC Davis both put the total acetaldehyde threshold near 100 to 125 mg/L, above which a wine reads as bruised apple, sherry, or walnut.
Free acetaldehyde registers far lower, and here a single day count falls apart. A 2022 study in Foods set one Syrah's orthonasal perception threshold at 6.9 ± 3.7 mg/L; in a second Syrah, richer in polyphenols, no threshold could be established at all up to 40 mg/L. My occupational joke is that "fresh" has produced more follow-up questions than any complicated French term, and it is the word people reach for here. Ask a narrower one: does the fruit still arrive first?
The oxygen you seal in is fixed the moment you reseal the bottle
Air is 20.95% oxygen. Bianchi and colleagues measured the consequence in a secondary shelf-life trial on two commercial red wines (Foods, 2023). Removing 375 mL from a 750 mL bottle and reclosing it introduced 78.7 mL of oxygen; removing 75 mL at a time introduced 15.7 mL per opening. Their bottles sat at a controlled 15 °C, assessed at 0, 3, 7, 15, and 30 days.
One more number makes those readable. Singleton measured oxygen solubility in air-saturated wine at 6.0 mL/L, or 8.6 mg/L, at room temperature and atmospheric pressure, reported by Waterhouse and Laurie in the American Journal of Enology and Viticulture in 2006. An air saturation is that much oxygen dissolved.
Then there is the wine's own defense. Dry red is commonly bottled at 25 to 35 mg/L free sulfur dioxide, and the AWRI's working figure is that 1 mg/L of oxygen can cost up to 4 mg/L of free SO₂. Roughly 7 mg/L of oxygen exhausts that shield, less than one saturation. Your bottle's headspace holds between nine and a hundred and forty.
Why the wine left in the bottle beats the calendar
The table assumes a 750 mL bottle, air at 20.95% oxygen, and one saturation at 6.0 mL per litre.

Available is not absorbed, which is what keeps days in the picture. Waterhouse and Laurie report red wine brought to saturation falling below 1 mg/L of dissolved oxygen in about six days at 30 °C, mostly through reactions with phenolics, and Singleton found red wine tolerating more than 30 saturations, 180 mL O₂ per litre, before showing oxidized character.
Daniel Pambianchi's 2016 trial supplies the sensory half. He poured 375 mL out of an unfined Merlot, resealed it with the original cork, and held it near 20 °C for five days. Dissolved oxygen rose 238%, free SO₂ fell about 60%, and the wine scored 15.0 on a 20-point scale against a control at 16.5.
The strongest case for the three-to-five-day rule is that it needs no thermometer and no arithmetic, and it errs toward drinking sooner, which is nearly always the right direction to err. As a default it is sound. It fails at both ends: three days is needlessly strict for a cold bottle two-thirds full, and five days is generous for the last third standing warm.
Port is not evidence that big reds keep
Port runs 19 to 22% alcohol with residual sugar, and tawny styles already spent years oxidizing in cask, so air after opening is no shock. Trade guidance puts an opened tawny at three to four weeks at room temperature and up to two months refrigerated, while Vintage Port runs two to five days and bottles past twenty-five years can fade within a day or two. Those numbers come from merchants and shippers; I found no controlled dissolved-oxygen or blinded sensory data on opened Port, and I will not dress trade consensus up as measurement.
Vintage Port is the most tannic thing in the category and the shortest-lived once opened. What extends tawny is ethanol, sugar, and oxidation it already survived. Tannin is not a preservative in the sense people mean when they assume a Cabernet outlasts a Pinot. Closure tells you more: a T-stopper was built to be reopened, and a driven cork was not.
What closures and preservation tools actually do
Bianchi's trial ranked closures on the same wine. In the static test, the polymeric cap held the hedonic index at or above the acceptability threshold of 6 out of 10 for all 30 days, while natural cork, screw cap, and crown cap dropped below it by about day 10. With repeated openings, the polymeric cap managed 15 days and everything else fell under 7. A screw cap reseals better than a cork shoved back in, and it is not a solution.
Vacuum pumps have the clearest measured ceiling. In Pambianchi's trial, about 4.2% oxygen remained in the headspace after more pump strokes than anyone performs in a kitchen, against 20.95% in air. Dissolved oxygen still rose 64% over five days, against 238% for the plain recork, and the pumped bottle scored 16.0 to the control's 16.5. A real improvement, and nothing resembling an oxygen-free bottle. Coravin and similar argon systems claim to hold headspace oxygen below 1%, but that is a manufacturer figure I have not seen reproduced beside sensory scores in an independent red wine trial.
Chanut and colleagues, in PNAS Nexus in 2023, found that with model wine present at 20 °C, close to 75% of oxygen transfer into a corked bottle happens at the glass-cork interface rather than through the cork. That work covers sealed bottles over 24 months, so it sets no day count for an opened one, but it explains why a hand-pushed cork underperforms.
A limit of mine: I have never measured dissolved oxygen. Every mg/L here comes from people who do. What I can vouch for is that the descriptors hold across noses. Since 2011 I have watched untrained tasters point at one wine and say bruised apple, at another and say nail polish.
Refrigeration is a rate decision, not a serving decision
Two true facts run in opposite directions. Cold wine dissolves slightly more oxygen, about 10% more at 5 °C than at room temperature, by Waterhouse and Laurie's figure. It also reacts with that oxygen more slowly, and that effect dominates. Acetic acid bacteria, strictly aerobic and the source of vinegar character, multiply more slowly cold as well.
Resist converting this into a clean multiplier. Scrimgeour and colleagues, in the Australian Journal of Grape and Wine Research in 2015, warn that the familiar doubling per 10 °C should be used with caution, since relative rate depends on each reaction's Arrhenius activation energy, and wine oxidation spans a wide range of them. Serving temperature is a separate decision: refrigerate the open bottle, then take it out 45 minutes before pouring.
Telling oxidation apart from a bottle fault
Three problems produce three vocabularies, and confusing them sends people after the wrong fix.
Oxidation gives bruised apple, sherry, walnut, and fruit arriving late or not at all. Volatile acidity gives vinegar, and with it ethyl acetate, which the AWRI describes as nail polish remover at a reported threshold of 12 mg/L; normal wines run 30 to 60 mg/L and defective ones 150 to 200. US standards of identity at 27 CFR 4.21 cap volatile acidity for natural red wine at 0.14 grams per 100 mL, or 1.4 g/L, as acetic acid exclusive of sulfur dioxide.
Cork taint is the third, and it does not smell like anything. Takeuchi, Kato, and Kurahashi showed in PNAS in 2013 that 2,4,6-trichloroanisole suppresses cyclic nucleotide-gated channels in olfactory receptor cells without evoking an odor of its own. It subtracts. Prescott and colleagues put consumer detection at 2.1 ng/L and rejection at 3.1 ng/L.
I learned that expensively. Years ago I told a host their three-day-old Bordeaux had oxidized in the fridge, called it hollow and fruitless, and advised them to stop keeping bottles so long. It was corked. Nothing about their storage was wrong, and I sent a careful person chasing a problem that did not exist, in print as well as at their table. A wine smelling of nothing is more likely tainted than tired. Tired wine smells of apple.
Cooking has a threshold, and oxidation is not it
Flat, sherried wine braises perfectly well. What ruins food is acidity, and reduction is the wrong process to apply to it, since heat drives off alcohol while concentrating the acetic acid and ethyl acetate left behind.
The alcohol side is documented. The USDA Table of Nutrient Retention Factors, Release 6, gives alcohol retention for a dish with wine stirred in as 40% after 15 minutes of simmering, 35% at 30 minutes, 25% at an hour, 20% at 90 minutes, and 5% at two and a half hours. Nothing on that table reaches zero, and nothing removes acid.
The threshold is a smell test, not a date. Oxidized but clean, use it; vinegar or solvent leading, and reduction concentrates that fault into the dish. Two weeks refrigerated is a fair outer limit.
Making the decision on the bottle in front of you
I used to tell people to smell the neck of the bottle, and around 2019 I stopped. A neck is a narrow vapor column over a small liquid surface, so it over-represents the most volatile fraction, the acetaldehyde and ethyl acetate, and buries everything slower. It produces false condemnations. In perfumery nobody judges a blotter on one sniff; you read it over time.
- Note the fill level and reseal when you pour, not after dinner.
- Refrigerate it upright, whatever you plan to serve it at.
- Pour about 30 mL into a glass and let it sit five minutes.
- Smell twice: once for whether fruit arrives first, once for apple, vinegar, or solvent.
- Drink it if fruit leads, cook with it if flat but clean, suspect the cork if it smells of nothing.
Two-thirds full and cold buys you a week and a half without much thought. One glass left at room temperature does not survive the weekend.
